Mark Ellman was part of the movement known as Hawaii Regional Cuisine, which is based on regionally produced farm goods. He and his wife Judy started Avalon restaurant back in 1987, and opened this seaside restaurant in 2005. “Garden” is the translation of the eatery's name, and it sits along a wharf in Lahaina town; the outdoor seating is lined with torches to match the sun setting by nearby mountains. First courses include Mark’s ahi tartare and seared ahi bruschetta, while entrées include the hoisin glazed baby back ribs, served with mashed potatoes and edamame.
