Opened by three veterans of Maya's (see below), the palm-shaded L'Esprit was red-hot when it debuted in 1999. Dishes such as sweet-and-sour sautéed prawns and lavender-and-rosemary grilled rack of lamb are just as good now as they were in the beginning.
