Upon entering the main dining room of Les Élysées, in the four-star Hotel Vernet near the Champs Élysées and Arc de Triomphe, look up to see the stained-glass dome ceiling with gilded edging, designed by Gustave Eiffel. Below, the sage-green chairs contrast with the pale linens and steel-gray floor. Chef Laurent Poitevin offers seasonal à la carte and tasting menus of classic French cuisine, such as artichoke velouté (soup) and foie gras custard royale, and crunchy sea bass filet with baby spinach. The wine cellar contains more than 12,000 bottles covering more than 900 types of wine.
