French chef Jean-Georges Vongerichten incorporates his affinity for Eastern tastes into the flavors and textures of his cuisine. The first restaurant bearing his name outside America opened in 2004 on the fourth floor of Three on the Bund. The interior is marked by city views, copper-leafed ceiling, wood panels, and a mix of blues and reds. Executive chef Lam Ming King guides the preparation of Asian-influenced, yet very French dishes. The menu starts with crunchy tiger prawns with pineapple juice and continues with main dishes like seared beef sirloin with coriander and garlic. The wine list numbers above 500.
