Housed inside the Hotel Nimb, Michelin one-starred Restaurant Herman serves cuisine that pays tribute to the culinary traditions of the Danish countryside. The kitchen is under the supervision of Thomas Herman, one of the country’s most renowned chefs, and he has crafted a menu of modern interpretations of classic Danish dishes. The menu changes seasonally, and diners can choose from among such offerings as grilled breast of pigeon with mushrooms, chestnuts, and charred vinaigrette or North Sea turbot with pickled garlic shoots and wild watercress. Framed by beige curtains, the floor-to-ceiling windows offer views of the Tivoli Gardens.
