Beijing artist, chef and trendsetter JinR has brought a spin-off of her Beijing venue to Hong Kong. The kitchen’s “New China” creations—for instance, fennel dumplings or black-sesame veal—highlight organic ingredients, served in beautiful, intricate presentations. The dishes are also designed to match a wide variety of teas. The harbor view lends a peaceful atmosphere to the white and silver dining room, which is furnished with daybeds and a stainless steel sculpture that doubles as a bar.
