The cartoonish anime posters on bright pink walls clue you in that this pan-Asian bistro isn't your typical Beaver Creek eatery. That's a good thing: Foxnut brings a cheery, breezy alternative to some of the village's older, more staid offerings. Start with the refreshing Dungeness crab and avocado salad, piled with heaps of moist crabmeat. Non-sushi eaters have a good selection of entrées, including a worthy crispy ginger shrimp, but raw fish is where this bistro shines. The signature Foxnut Roll (spicy crab, spicy tuna, cucumber, and avocado wrapped in strips of tuna and crab) and the simple Bonsai Roll (yellowtail, asparagus, and avocado) are packed with flavor and surprisingly fresh for a mountain town. But Foxnut is building its reputation on the imaginative Tunatini—a spicy tuna and wasabi cream concoction with avocado puree and jalapeno relish that shows just how different and inspired Foxnut can be.
