Housed inside a former Schweppes factory, Foveaux showcases the progressive European cuisine of chef Darrell Felstead. The British-born Felstead, who has worked in some of Sydney’s top restaurants, including Forty One and Prime, uses foams, jellies, and purées to add texture to his signature dishes. Menu offerings include a number of inventive combinations, such as caramelized venison tongue with crispy pork skin and cauliflower cream or duck confit spring roll with tamarind purée. The dining room is bright and inviting with sandstone brick walls, neutral linens, and highback chairs.
