A Michelin one-starred restaurant, Formel B serves Danish and French fusion cuisine crafted by its chefs, Kristian Møller and Rune Jochumsen. Møller and Jochumsen are almost fanatical about the freshness of their ingredients, sourcing many from their own farms. The menu changes every two weeks and includes such inventive offerings as quail with glazed chicory, walnuts, and vanilla and salted foie gras with grape juice, apple, and crisp rye bread. The dining room is sleek, with wood floors, brown leather chairs, white table linens, and soft lighting.
