Brett Redman and Rob Green started their casual, market-driven restaurant as a pop-up in Victoria Park and, in 2010, found a permanent home in Borough Market. The duo create nearly daily-changing menus using produce solely from neighboring purveyors; their one standby, a superthick burger made with coarsely chopped aged beef from UK celebrity butchers “The Ginger Pig” and aged comté, ranks as one of London’s best. Burger enthusiasts take note: It’s only served for weekday lunch.
