Sculptor-turned-chocolatier Will Gustwiller uses only high-grade cocoa beans from sustainable sources, as well as other organic and seasonal ingredients, to create his artistic confections. But Gustwiller made Elipse more than just a chocolate shop, as this sweet-smelling space in University Heights is also a coffeehouse and a dessert café. Some come here to indulge in the crème fraîche cupcakes and thick drinking chocolates infused with exotic flavors like rosemary mint. The monthly prix fixe dinners are renowned for chocolate-inspired dishes such as sloppy Joe’s with a chocolate-laced Bourbon barbecue sauce.
