Al Pompiere

38 Via S. Maria dei Calderari
Rome , Italy http://www.alpompiereroma.com/
39-06-686-8377

Located on the first floor of the 16th-century palace of Beatrice Cenci at the edge of the old Jewish ghetto, this restaurant has a ghostly history. Once diners look past the building's dark past, they settle in to enjoy Roman and Judeo-Roman cuisine, which includes dishes such as crispy artichokes, fried zucchini flowers, and spaghetti carbonara—made with bacon from pork jowls and washed with wine and herbs. In the Roman tradition, certain dishes are associated with certain days. Not surprisingly, the freshest fish is reserved for Friday.
