In this hip, stylish, and cavernous boîte in the city's El Born district (Barcelona's SoHo), Carles Abellán—protégé of legendary chef Ferran Adrià of El Bulli—takes an inspired, theatrical approach to tapas: Asparagus stalks protrude from a glass next to a coffee cup of asparagus foam, custom-designed metal cans contain smoked and pickled fish, egg cartons hold eggshells filled with yolk foam and truffles, marinated sardines are set on balsamic vinegar, and rich blood sausage is layered with mashed potatoes.
