Named after Colombian sculptor Fernando Botero, this steakhouse contains original work by the eponymous artist, as well as other dramatic touches like huge white columns and colorful mosaic flowers on the floor. Located inside Encore at Wynn Las Vegas, the restaurant also has an adjacent patio overlooking the hotel pool. Chef Mark LoRusso’s menu emphasizes quality steaks—such as the bone-in rib eye—paired with sides like truffled macaroni and cheese, and roasted bone marrow with onion jam. For dessert, pastry chef Sara Steele prepares childhood-inspired dishes like s’mores brioche doughnuts, filled with marshmallow and served with warm chocolate ganache.
