Gigantic aquariums holding hundreds of goldfish mark the entrance to Caesars Palace's casual outpost of Northern Chinese-style cuisine. Soup dumplings, dim sum, and noodle dishes featuring house-made, hand-pulled, noodles are served surprisingly quickly. In a town known for conspicuous displays, #9's open kitchen delivers a bravura performance as noodle chefs knead, pull, toss, fold, roll, and finally cook noodles to the fascination of watching guests. The decor is modern-metropolitan Asian with a white-on-white palette, contemporary cafe-style furniture, and floral flourishes.
