Zebra Icebox Cake
I made this cake for my mom's 60th birthday. I skipped the meringue and topped the cake with the rest of the whipping cream carton (whipped) that I folded the leftover filling into. Then I decorated the plates with fresh pitted dark cherries. It was a hit -- she loved it. This cake took way longer than the active time but was worth it!

Delicious - but it should be! This cake is a LOT of work for what it is (a jazzed up icebox cake) and the active time is pretty misleading. Making, rolling and cutting the cookies takes loads of time, not to mention the filling (whisking/beating it is 9 minutes in itself),then assembling and making meringue to boot! Plan on a full morning project if you're going to make this.
