Yogurt and Apricot Pie with Crunchy Granola Crust
This is very good. I think it is better with more filling--I increased to 1.5x filling (3 eggs, 1 1/2 c yogurt, etc). I have varied the toppings--it's great with blueberries.

Was a big hit! The crust was a bit too crumbly, but it tasted delicious!
