Xanthan Simple Syrup

  • TOTAL TIME: 30 MIN plus 4 hr resting
  • SERVINGS: 2 1/4 cups
  • MAKE-AHEAD

To give a luxurious silky texture to cocktails, this simple syrup (a syrup made by dissolving sugar in water) is thickened slightly with xanthan gum.

  1. 1 1/2 cups water
  2. 1 1/2 cups sugar
  3. 0.5 gram (1/8 teaspoon) xanthan gum
  1. In a medium saucepan, combine the water and sugar and bring to a boil. Let the syrup cool completely, then transfer to a blender. With the blender on, add the xanthan gum and blend until the syrup is slightly thickened, about 15 seconds. Transfer the syrup to a jar, cover and refrigerate until clear, at least 4 hours or overnight.
Make Ahead The syrup can be refrigerated for up to 1 month.
