"I have an affinity for the past," says Jonny Raglin. Wonderlust is his tribute to cocktail ingredients that were ubiquitous a century back but rare five years ago. Pineapple gum syrup is available at smallhandfoods.com.

  1. 1/4 ounce absinthe
  2. Ice
  3. 1 ounce genever, preferably Bols
  4. 3/4 ounce crème de violette (violet liqueur)
  5. 3/4 ounce pineapple gum syrup (thickened pineapple-flavored Simple Syrup)
  6. 3/4 ounce fresh lemon juice
  7. 1 spiral-cut lemon twist, for garnish
  1. Rinse a chilled coupe with the absinthe; discard the excess. Fill a cocktail shaker with ice. Add all the remaining ingredients except the garnish; shake well. Strain into the coupe; garnish with the lemon twist.
