- 6 medium sweet potatoes, about 10 ounces each
- 1 tablespoon olive oil
- Salt and freshly ground pepper
- Preheat the oven to 350°. Rub each potato with some of the oil and prick each all over with a fork 5 or 6 times. Roast the potatoes directly on the rack, placing a sheet of foil on the rack below to catch any drips, until tender, about 40 minutes. Split each and season with salt and pepper.
