Winter Squash and Gouda Croquettes
Chef Octavio Becerra found the inspiration for this dish at a small cheese festival in Petaluma, California, in an aged Gouda cheese made by Valerie Thomas of Winchester Cheese Company in Riverside County (winchestercheese.com). "Her Gouda has been on my mind for months. Any time I can work it into my food, I do." Here he uses the salty, minerally cheese to season crunchy pastry rounds sweetened with soft-baked winter squash.
