Holly Roberts's drink is named after the white-marble statue of the Greek goddess of victory, Nike. In certain light, the statue can appear almost copper in tone, just like this cocktail.
Fill a pint glass with ice. Add the bourbon, chocolate liqueur and sherry and stir well. Strain into a chilled coupe and garnish with the coffee beans.
