"I don't care if you're sophisticated, with a boatload of money," says Thomas Keller, "roasted chicken makes you feel wonderful." Cooking a whole chicken on the grill can be tricky, but Keller has perfected a method that uses indirect heat; he adds rosemary sprigs to the coals to infuse the smoke and flavor the chicken.

Un-freakin'-real! I thought Keller's famous oven-roasted chicken recipe could not be beat, and I also thought this version might not be as juicy or as evenly browned or cooked. Nope! Perfect skin! Subtle smoke and herbal notes! Super-juicy and tender breast meat! without a doubt the best roast chicken I've had--anywhere, any price--in my life. (Props to Weber, maker of the best kettle grill in the world.)
