Whiskey Chai

For this warm, boozy nightcap, Linda Aldredge uses a blend of whole spices but home cooks can buy Chai Spice Blend from TeaSource.

  1. 2 cinnamon sticks, broken into pieces
  2. 20 black peppercorns
  3. 16 whole cloves
  4. 8 cardamom pods, seeds removed from the pod
  5. 1 teaspoon ground ginger
  6. Pinch of freshly grated nutmeg
  7. 1 quart whole milk
  8. 1/4 cup light brown sugar
  9. 1 tablespoon loose black tea
  10. 3 ounces bourbon or rye whiskey
  1. In spice grinder, pulse all of the spices to a powder.
  2. In a saucepan, bring the milk to a simmer. Remove from the heat. Add the spices, sugar and tea and let stand for 10 minutes. Strain the chai into a bowl. Wipe out the saucepan.
  3. Return the chai to the saucepan and rewarm over moderate heat. Stir in the whiskey and serve hot.
