Whipped Herbed Ricotta

Pureeing ricotta in the food processor makes it seem extra creamy. Dollop it over pasta with tomato sauce or just over toast.
- 1 cup ricotta
- 1/4 cup finely chopped basil
- 2 tablespoons finely chopped chives
- Freshly ground pepper
- In a mini food processor, puree the ricotta until smooth. Add the basil and chives, season with salt and pepper and pulse to combine.
The whipped herb ricotta can be refrigerated for up to 2 days.
