Verjus Vinaigrette

Verjus is the juice of wine grapes. It's popular with chefs because, unlike vinegar, the flavor doesn't conflict with wine.

  1. 1/3 cup verjus
  2. 3 tablespoons grapeseed oil
  3. 1 scallion, minced
  4. 1 1/2 teaspoons finely chopped dill
  5. 1 teaspoon Dijon mustard
  6. Salt and freshly ground pepper
  1. Combine all of the ingredients in a jar and shake to emulsify.

Salad match Pea shoots or mixed greens.
