According to Beke, this mimosa-like cocktail is said to have been the winning drink in the first-ever official bartender competition, in Vienna, around 1910.

  1. Ice
  2. 1/4 ounce apricot Eau-de-vie mixed with 1 1/2 teaspoons sugar, or 1/2 ounce Apricot brandy
  3. 2 dashes of orange bitters
  4. Juice of 1/2 large orange
  5. 3 ounces chilled Champagne
  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients except the Champagne and shake well. Strain into a chilled flute and top with the Champagne.
