Ryan McGrale is a perfectionist who specializes in refined riffs on classic cocktails. His take on the mojito is made with an intense mint syrup.
"I hate things floating in drinks," says McGrale, who pours his version of a mojito through a tea strainer in order to catch pieces of muddled mint. "You get about halfway through most mojitos and the mint starts to pile up in the bottom of the glass. Or it gets stuck in your teeth."

- 15 mint leaves, plus 1 mint sprig for garnish
- 1/2 ounce fresh lime juice
- 1/2 ounce Mint Syrup
- 2 1/2 ounces light rum
- 1 ounce chilled club soda
- In a cocktail shaker, muddle the mint leaves with the lime juice and Mint Syrup. Add ice and the rum, shake well and strain into an ice-filled highball glass. Top with the club soda and garnish with the mint sprig.
