In this variation on the 20th Century cocktail, mixologist Maxwell Britten uses Kübler, a clear absinthe that turns milky white when mixed with water or ice.

How to Poach Eggs in a Strainer

Ingredients

  • 3/4 ounce absinthe blanche, such as Kübler
  • 3/4 ounce Lillet blanc
  • 1/4 ounce white crème de cacao
  • 3/4 ounce fresh lemon juice
  • 1/2 ounce Simple Syrup
  • Ice
  • 1 lemon twist, for garnish

How to make this recipe

  1. In a cocktail shaker, combine the absinthe, Lillet, crème de cacao, lemon juice and Simple Syrup. Fill the shaker with ice and shake well. Strain into a chilled coupe and garnish with the twist.
