2 pounds large tomatoespeeled, seeded and coarsely chopped
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Heat the olive oil in a medium saucepan until shimmering. Add the tomatoes, cumin and cayenne and cook over moderate heat until thick, mashing the tomatoes against the side of the pan with a wooden spoon, about 5 minutes. Season with salt and serve warm.
