Tomato Sauce with Cumin

  • SERVINGS: MAKES ABOUT 2 CUPS

  • VEGETARIAN
  1. 1/4 cup pure olive oil
  2. 2 pounds large tomatoes—peeled, seeded and coarsely chopped
  3. 2 teaspoons ground cumin
  4. 1/2 teaspoon cayenne pepper
  5. Salt
  1. Heat the olive oil in a medium saucepan until shimmering. Add the tomatoes, cumin and cayenne and cook over moderate heat until thick, mashing the tomatoes against the side of the pan with a wooden spoon, about 5 minutes. Season with salt and serve warm.
