Tom Collins

Cocktail historians credit this classic summer gin drink to John Collins, a waiter at Limmer’s Old House in 1800s London. The “Tom” part came along when bartenders began making it with Old Tom gin, which is slightly sweet. Although the name stuck, London dry gin now forms the base of the modern Tom Collins.
