Ingredients

1. 1/2 ounce fresh lemon juice
2. 1/2 ounce fresh lime juice
3. 3/4 ounce Simple Syrup
4. 1 ounce pisco (South American grape-based spirit)
5. 2 ounces Aperol or Campari
6. 1 large egg white
7. Ice
8. 4 drops of Angostura bitters

Directions

1. In a cocktail shaker, combine all of the ingredients except the ice and bitters. Shake vigorously for 30 seconds. Add ice, then shake again. Strain into a chilled martini glass. Drop 4 dots of bitters onto the surface of the drink in the pattern of a square and swirl gently with a straw or toothpick to make a design in the foamy head.
