Lucy Brennan's knack for using offbeat drink ingredients like avocados and beets inspires other Portland bartenders, making the city one of America's most exciting cocktail towns.
Brennan has a loyal following for her cocktail classes, taught once a month at 820. "I've had people take my class three or four times," she says. "Then they throw their own cocktail parties and try to impress me."

Ingredients
- Ice
- 2 ounces vanilla vodka
- 2 tablespoons Fig Puree
- 1/2 ounce ruby port
- 1/2 ounce fresh lemon juice
- 1/2 ounce Simple Syrup
- 1 slice of fresh fig or 1 edible flower
Directions
- Fill a cocktail shaker with ice. Add the vodka, Fig Puree, port, lemon juice and Simple Syrup. Shake well and strain into a chilled martini glass. Garnish with the fig slice or flower.
