Lucy Brennan's knack for using offbeat drink ingredients like avocados and beets inspires other Portland bartenders, making the city one of America's most exciting cocktail towns.

Brennan has a loyal following for her cocktail classes, taught once a month at 820. "I've had people take my class three or four times," she says. "Then they throw their own cocktail parties and try to impress me."

  1. Ice
  2. 2 ounces vanilla vodka
  3. 2 tablespoons Fig Puree
  4. 1/2 ounce ruby port
  5. 1/2 ounce fresh lemon juice
  6. 1/2 ounce Simple Syrup
  7. 1 slice of fresh fig or 1 edible flower
  1. Fill a cocktail shaker with ice. Add the vodka, Fig Puree, port, lemon juice and Simple Syrup. Shake well and strain into a chilled martini glass. Garnish with the fig slice or flower.
