Using a hand-cranked machine, the Little Owl’s co-owner Gabriel Stulman crushes the ice for each of the wine cocktails served at his new Mediterranean restaurant in Manhattan’s West Village. This riff on a Pimm’s Cup substitutes dry manzanilla sherry for the traditional gin-based Pimm’s No. 1 for a less potent effect.

Ingredients

  1. Crushed ice
  2. 3 ounces manzanilla sherry
  3. 6 mint leaves, crushed, plus 1 mint sprig
  4. 1 ounce chilled aranciata (Italian orange soda), or Orangina
  5. 1 teaspoon sugar
  6. 3 dashes of Angostura bitters
  7. 1 cucumber slice

Directions

  1. Fill a julep glass with crushed ice. In a cocktail shaker, combine the sherry, mint leaves, aranciata, sugar and bitters and shake well. Strain over the ice and garnish with the mint sprig and cucumber slice.
