The Bellini Variations

Ingredients

  1. 6 peaches
  2. 4 pink grapefruit
  3. 2 pints strawberries
  4. 1 bottle sparkling Italian wine (Prosecco or spumante)

Directions

  1. Peel, pit and blend peaches until smooth and pour into a glass pitcher. Juice grapefruits and pour into a glass pitcher. Hull and rinse strawberries, and blend until smooth. Pour purées according to taste, about one-third full into 6 beautiful champagne flutes and fill slowly with sparkling wine. Serve immediately with 1 long cocktail spoon.

Notes

    Cooking Club Tip: One great Prosecco for making Bellinis is the Bellenda Prosecco di Conegliano Valdobbiadene from Italy’s Veneto region . It’s more elegant than most Proseccos with lively herb, lime and mineral notes. Also look for aromatic, fruity Prosecco from Zardetto.
