- 6 peaches
- 4 pink grapefruit
- 2 pints strawberries
- 1 bottle sparkling Italian wine (Prosecco or spumante)
- Peel, pit and blend peaches until smooth and pour into a glass pitcher. Juice grapefruits and pour into a glass pitcher. Hull and rinse strawberries, and blend until smooth. Pour purées according to taste, about one-third full into 6 beautiful champagne flutes and fill slowly with sparkling wine. Serve immediately with 1 long cocktail spoon.
Notes
One great Prosecco for making Bellinis is the Bellenda Prosecco di Conegliano Valdobbiadene from Italy's Veneto region. It's more elegant than most Proseccos with lively herb, lime and mineral notes. Also look for aromatic, fruity Prosecco from Zardetto.
