Thai Martini

This drink was inspired by a Thai soup recipe made with apple and coconut milk.
- 1/2 Granny Smith apple, chopped, plus 1 thin slice for garnish
- 1 teaspoon minced lemongrass
- Ice
- 2 1/2 ounces coconut rum
- 1 ounce sour apple liqueur
- In a cocktail shaker, muddle the chopped apple with the lemongrass. Fill the shaker with ice. Add the rum and sour apple liqueur and shake well. Strain into a chilled martini glass and garnish with the apple slice.
