Tender Rose Salad

It may seem like overkill, but this delicate salad is the ideal first course for the Roasted Squab with Rose Petals. You can double all the ingredients to make four servings.

  1. 1 tablespoon Rose Petal Vinegar
  2. 1 tablespoon canola oil
  3. 1/4 teaspoon kosher salt
  4. 1/4 teaspoon freshly ground pepper
  5. 6 cups (lightly packed) assorted tender salad greens, such as mâche, Boston Lettuce, purslane
  6. 1/2 cup (lightly packed) fragrant edible rose petals
  1. In a large bowl, combine the vinegar, oil, kosher salt and pepper. Add the greens and toss. Sprinkle the rose petals on top and toss gently. Serve.
