Troy Sidle makes this drink with intensely smoky Bowmore Legend Scotch. To temper the smokiness, you can substitute a less peaty Scotch like Glenlivet.
- In a cocktail shaker, muddle the 3 blackberries with the Rich Simple Syrup. Add the Amaro, Scotch, sherry and bitters, fill the shaker with ice and shake well. Fine-strain into a chilled ice-filled highball glass, stir in the club soda and garnish with the skewered blackberries.
