Tahini Sauce

Tahini sauce always accompanies Falafel; it's also traditional for dressing simple plates of fried, broiled or roasted fish. The sauce lends a platter of steamed or roasted vegetables a spark of flavor and richness they might lack on their own.
- 1/2 teaspoon minced garlic
- 1 cup tahini
- Fresh lemon juice
- Salt
- In a bowl, stir the garlic into the tahini. Add water, 1 teaspoon at a time, until the sauce has the consistency of thick cream. Add lemon juice until the sauce is pleasantly tangy and season with salt.
