This pie is a variation on Greek spanakopita. In the past several years, dishes like these have made the leap from diners to white-tablecloth restaurants, such as San Francisco's Kokkari.

Pairing Suggestion

A round-textured Sauvignon Blanc will complement the pie filling's creamy texture. Try the 1998 Murphy-Goode Fumé Blanc Reserve from California or the 1999 Simunye from South Africa.
