Ehrmann particularly likes what the kiwi ("an underutilized fruit") does for this cooler: "It contributes both sweet and sour, like citrus, and gives it a great texture."

  1. 1/2 kiwi, peeled and quartered, plus 1 or 2 kiwi slices for garnish
  2. Ice
  3. 2 ounces vodka
  4. 1/2 ounce Aperol (bitter orange Italian aperitif)
  5. 1 ounce Tangerine Syrup
  6. 1 ounce chilled club soda
  7. 1 tangerine wheel, for garnish
  1. In a cocktail shaker, muddle the kiwi. Add ice and the vodka, Aperol and Tangerine Syrup and shake well. Strain into an ice-filled highball glass, top with the club soda and garnish with the kiwi slices and tangerine wheel.
