- 1 cup apple juice
- 1/2 cup oil-packed sun-dried tomatoes, drained
- 1/4 cup brown sugar
- 1/4 cup cider vinegar
- Pinch of ground cloves
- Pinch of ground ginger
- Pinch of cayenne
- 1/2 small yellow onion
- 1 garlic clove
- Salt
- Combine the apple juice, tomatoes, brown sugar, vinegar, cloves, ginger, cayenne, onion and garlic in a blender and blend until fairly smooth. Transfer the mixture to a medium saucepan. Season with salt and simmer over moderate heat, stirring occasionally, until very thick and slightly darkened, about 15 minutes.

The ketchup can be refrigerated for up to 2 weeks.
