Ingredients

1. One 1-inch piece of fresh ginger, peeled and thinly sliced
2. 1/2 tablespoon Simple Syrup
3. 3 tablespoons apple cider
4. 3 tablespoons aged rum
5. 3 tablespoons ginger beer
6. 1 lime wedge
7. 1 thin tart apple slice, for garnish

Directions

1. In a cocktail shaker, muddle the ginger and Simple Syrup. Add ice and the cider and rum, shake well and strain into a rocks glass over ice. Top with the ginger beer and a squeeze of lime and garnish with the apple slice.
