“I know that apples and ginger go well together, but my wife makes a ginger-and-orange doughnut that is nothing short of exquisite, so I combined the three flavors for this mocktail,” Jonny Raglin says. He makes it with a gastrique, a syrup of vinegar, sugar and, typically, fruit. Like a real cocktail, it has a sugared rim. (Note: The bitters in the drink are alcohol-based. For a completely nonalcoholic cocktail, leave them out.)

- 1 orange wedge
- Sugar
- Ice
- 3 ounces chilled apple cider
- 1 1/2 ounces fresh orange juice
- 1 ounce Ginger Gastrique
- 3 dashes of Fee Brothers Old Fashion bitters (optional)
- Moisten the rim of a coupe with the orange and coat with sugar. Fill a cocktail shaker with ice. Add the remaining ingredients and shake well. Strain into the coupe.
