Spicy Sautéed Broccoli

Sambal oelek garlic-chile sauce—long a staple of Asian groceries and specialty stores—is now available in many supermarkets. Combined with a little sesame oil, the spicy sauce turns a broccoli sauté into a standout side dish.

  • 2 tablespoons unsalted butter
  • 1 shallot, chopped
  • 2 garlic cloves, thinly sliced
  • Kosher salt
  • Freshly ground black pepper
  • 1 pound broccoli, thick stems peeled, cut into flowerets
  • 1 cup water
  • 1 tablespoon sambal oelek
  • 2 teaspoons Asian sesame oil

How to make this recipe

  1. In a large heavy skillet, heat the butter over medium high heat, then stir in the shallot, garlic, 3/4 teaspoon of salt and 1/2 teaspoon of pepper. Cook, stirring occasionally, until the shallot and garlic are golden, about 5 minutes. Stir in the broccoli, water and <em>sambal oelek</em> and cook, covered, until the broccoli is crisp-tender and the water is evaporated, 10 to 12 minutes. Drizzle with the sesame oil, season with salt and pepper to taste and serve.
