Spicy Ginger and Lemon Chicken

This wonderful chicken dish is made with one chicken leg that is skinned and then cooked with a uniquely flavored sweet and spicy mixture that is especially complementary to the chicken. The dish can be made ahead and reheated at serving time.

  1. 1 teaspoon virgin olive oil
  2. 1 chicken leg (8- 10 ounces), skinned
  3. Dash of salt
  4. 1/8 teaspoon chili powder
  5. 1/8 teaspoon ground cumin
  6. Dash of dried thyme leaves
  7. Dash of cayenne pepper
  8. 1/2 teaspoon all-purpose flour
  9. 1 strip lemon zest
  10. 1 strip orange zest
  11. 1 teaspoon fresh ginger
  12. 1 small garlic clove, peeled
  13. 1/4 cup sweet apple cider
  1. Heat the oil in a large saucepan until it is hot but not smoking. Add the chicken leg and brown it over moderate heat, turning occasionally, 10 to 12 minutes. Add the remaining ingredients and bring to a boil. reduce the heat to low, cover and cook gently for 15 minutes. Serve with the natural cooking juices.
