Spiced Ginseng Iced Tea

- 8 cups cold water
- 8 cardamom pods, crushed
- 6 whole cloves
- 2 cinnamon sticks
- 1 star anise pod
- 8 ginseng tea bags
- 1/4 cup plus 1 tablespoon honey
- Ice cubes
- In a large saucepan, combine the cold water with the cardamom pods, cloves, cinnamon sticks and star anise and bring to a boil. Remove from the heat and add the tea bags. Let steep for 5 minutes. Remove the tea bags and stir in the honey until it is dissolved. Strain the tea into a pitcher and let cool to room temperature, then refrigerate until chilled. Serve in tall glasses over ice.

The iced tea can be refrigerated in a covered pitcher for up to 2 days.
